Jalapeño Alfredo Pasta
A spicy twist on the classic Alfredo pasta with roasted jalapeños.

4 garlic cloves
to taste salt
to taste pepper
1 cup Parmesan cheese
1 cup heavy cream
1 cup half & half
your choice pasta
to shave on top extra Parmesan
Start off by roasting your jalapeños on your stove. Once they’re all roasted and have a black layer, put them in a ziplock or any type of bag to let them steam.
After 10 minutes use a paper towel or napkin and peel the skin off the jalapeños.
Once they’re peeled, cut them in half, take out all the seeds & throw just the jalapeños into the blender with 1 cup of half & half and blend until all the jalapeños have mixed with the half & half.
Into a large pan throw in some oil and cook off your minced garlic for 30 seconds, now throw in your jalapeño sauce and mix in 1 cup of heavy cream. If the cream isn’t enough, add more heavy cream.
Season with salt & pepper to your liking and follow it up with your Parmesan cheese. Mix thoroughly and if the sauce still isn’t thick enough, add more Parmesan until it thickens.
Now go ahead and throw in your cooked pasta and mix in thoroughly without breaking the pasta apart. Add more Parmesan if you would like.
Serve it up with some more Parmesan and enjoy.
