Slow-roasted Lemon Dill Salmon

This simple dish takes 10 minutes of prep time and comes out flakey and full of flavor! Serve it with smoked paprika potato salad or almond butter harissa kale salad for a well-rounded meal this week.

Ingredients

  • 1.2 lbs salmon
  • 1 red onion
  • 1 lemon
  • 0.25 cup dill
  • 0.25 cup parsley
  • 0.25 cup green olives
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes
