Chorizo and Bean Baked Eggs

Mexican beans meet Shakshuka in these seriously tasty chorizo and bean baked eggs.

Ingredients

  • 1 tsp olive oil
  • 100 g diced chorizo
  • 1 diced shallot
  • 1 diced red pepper
  • 3 diced garlic cloves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp coriander seeds
  • 1 tsp chilli powder
  • 1 tsp hot smoked paprika
  • 1 tsp sweet smoked paprika
  • 1 tsp oregano
  • 1 Pinch of salt
  • 1 cinnamon
  • 1 black pepper
  • 3 tbsp tomato purée
  • 1 400g tin black beans with half the bean stock
  • 150 ml chicken stock
  • 1 Medium bunch of chopped coriander
  • 2 4 if preferred eggs
  • 1 Chopped chives
  • 1 Za’atar
  • 1 lime wedges
