Ugly Delicious Roasted Cauliflower with Green Tahini
An inspired dish by Ottolenghi featuring flavorful roasted cauliflower with green tahini.

1 head cauliflower
1.5 tbsp za’atar
2 tbsp tahini
1 Large bunch fresh coriander
1 Large bunch fresh parsley
0.5 Juice lemon
1 Splash water
To serve harissa
To serve mixed seeds
Break cauliflower into smaller chunks, add to a baking tray, coat thoroughly with olive oil and spices.
Bake at 190C for 30-40 minutes until tender and golden.
Whilst the cauliflower is roasting, add your tahini, fresh herbs, lemon juice, and splash of water to a blender and mix until smooth.
Serve the cauliflower on top of the tahini, top with harissa and seeds.
