Cacio e Pepe
Translates to “cheese and pepper”…it really is that simple and very quick to make!

500 g spaghetti
1 tbsp freshly ground black pepper
200 g pecorino
Add your spaghetti to boiling salted water and cook for about two minutes less than you would normally
Add your freshly ground pepper to hot a pan and heat for about 30 seconds until you can smell the pepper then add 1/3 cup of water and stir for a minute until it reduces slightly
Add your pecorino bowl along with 1/3 cup of hot pasta water and stir to make a thick creamy sauce
Once your pasta is cooked, turn the heat back on the pan with the water and pepper in, then add the spaghetti and the pecorino sauce, stir well so that the cheese emulsifies with the pepper water
Serve with a little extra ground pepper
