Cannellini Beans in Tomato Sauce

Tomato season is slowly falling upon us and I am thrilled. This was a very simple, quick dish of cannellini beans braised in a sweet cherry tomato sauce. Cutting the tomatoes in half really speeds up the time it takes them to break down in the pan. This was just delicious mopped up with good crusty bread.


  • 2 punnets cherry tomatoes (yellow and red)
  • 1 a half red onion
  • 4 cloves garlic
  • 2 tins cannellini beans
  • Basil
  • Optional: Pine nuts
  • Soft (vegan) cheese like ricotta, stracciatella, mozarella
