Sweet Chili Chicken Fried Rice
A delightful blend of sweet and savory flavors in this easy-to-make sweet chili chicken fried rice.

2 cups jasmine rice or basmati rice
2 julienne cut boneless skinless chicken
1 cup mixed vegetables (peas, carrots, corn, and/or bell peppers)
3 tablespoons sweet chili sauce
2 tablespoons soy sauce
1 tablespoon oyster sauce
2 cloves garlic
1 teaspoon ginger
2 tablespoons vegetable oil
to taste salt
to taste pepper
for garnish green onions
for garnish red chili flakes
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Sauté minced garlic and grated ginger until fragrant.
Add chicken to the skillet and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet or wok, add another tablespoon of oil if needed. Sauté mixed vegetables until tender-crisp.
Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked.
Combine the cooked chicken with the vegetables and eggs in the wok.
Add chilled cooked rice to the wok, breaking up any clumps.
In a small bowl, mix sweet chili sauce, soy sauce, and oyster sauce. Pour the sauce over the rice mixture.
Stir everything together until well combined and heated through.
Garnish with chopped green onions and red chili flakes.
Serve hot and enjoy the delightful blend of sweet and savory flavors!
